Thanksgiving week and we grew up eating very fresh veggies usually covered with olive oil. I never tried green bean casserole until I was in college and went to a friend's house for the holidays. Here's a version of my Mom's recipe. Also, purple green beans will change color when you cook them to a dark green! When we went to the Farmer's Market and bought the purple beans, I was so excited! After cooking them, they were yellow, green, and dark green. It seemed like a trick! But they still tasted delicious!

Ingredients
  • 2 pounds Green Beans
  • 1 Tbsp Olive Oil
  • 2 Tbsp Balsamic Vinegar
  • ½ Tbsp Garlic Powder
  • 1 Tbsp Herbs De Provence
  • 1 tsp Lemon Pepper
  • Salt & Pepper to taste
Instructions
  1. Cut tips off green beans. Steam beans for 7-8 minutes. Remove from heat.
  2. Toss all ingredients in a bowl and mix.
  3. Serve!

    We didn’t have green beans with this years Thanksgiving meal but your photos make me wish that we did.
