We all have days where we are exhausted, tired, stressed, and worn out by the time dinner rolls around. The thought of trying to make a meal can be overwhelming. Also, the option of actually going to a store to get fresh vegetables and protein might be non-existent. So this is when I love going into my cupboard to concoct a fabulous meal in minutes. You will be surprised how easy making a well-balanced dish which includes vegetables, protein, and starches and all from items in your cupboard, can be. Ingredients
  • 1 can green beans, drained and rinsed
  • 1 can wax beans, drained and rinsed
  • 1 can garbanzo beans, drained and rinsed
  • 2 cans tuna in water, drained
  • 2 Tbsp lemon juice
  • ¼ tsp garlic powder
  • ½ tsp oregano
  • ½ tsp thyme
  • ½ tsp basil
  • ½ tsp lemon pepper
  • Salt & Pepper to taste
Instructions

  1. Toss everything together in a bowl. Serve! It’s that simple.
