Getting ready for Valentine’s Day, I love trying out new desserts that are satisfying, wholesome, and guilt-free. Berry crumble in ramekins is a fabulous recipe and perfect for portion control because every person gets their own individual ramekin. The berries provide antioxidants to rock your brain health, too. Plus, this dessert is so fast and easy to prepare, you’ll seem like a gourmet chef without any stress or complicated directions. Ingredients
  • 12 ounces mixed frozen berries (blueberries, raspberries, blackberries, strawberries)
  • 2 Tbsp brown sugar
  • 2 tsp cornstarch
  • 1 ½ cups of crumble topping
  • Crumble Topping:
  • 1 cup rolled oats
  • ½ cup chopped almonds
  • 2 Tbsp brown sugar
  • ½ tsp ground cinnamon
  • 2 Tbsp coconut oil
Instructions
  1. Preheat the oven to 350°. Melt the coconut oil so it’s in liquid form.
  2. Combine the crumble ingredients in a small mixing bowl and stir.
  3. In a larger mixing bowl, combine the frozen berries, sugar, cornstarch, and ½ cup of the crumble and stir.
  4. In 4 ramekins (about 8-ounces big), add the berry mix.
  5. Top each ramekin with ¼ cup of the crumble. Place the ramekins on a baking sheet and bake in the oven for 30-35 minutes or until the fruit is bubbling and the topping is browned. Remove.
  6. Let the crumbles cool for 15-20 minutes before serving.
