Sautéed Sweet Potatoes

- 2 medium sized sweet potatoes
- 1 tsp olive oil
- 1 Tbsp fresh thyme
- ½ tsp garlic powder
- ½ tsp dried chili flakes
- 1 Tbsp balsamic vinegar
- Salt & Pepper to taste
- Wash, scrub, and dice the potatoes in cubes.
- In a bowl, toss the potatoes with the thyme, garlic powder, chili flakes, salt, and pepper.
- In a medium sauté pan over medium heat, heat the olive oil. Add the potato mixture to the pan.
- Cover and cook for 12 minutes stirring occasionally.
- Remove from heat and mix in the balsamic vinegar. Serve.
