Quick & Easy Herb & Lemon Sauce Pork with Mashed Potatoes & Tomato Zucchini Bake

This meal is a delicious, balanced meal that is quick and tasty. You can serve it at a dinner party with little fuss before the meal. I pre-make the cilantro sauce the night or weekend before. I also prep the tomato zucchini bake so that I pull it out of the fridge to put in the oven. By doing some pre-prep, I cut my actual cooking/prep time down by 20 minutes!

Ingredients
  • • 6 pork loins
  • Quick & Easy Herb & Lemon sauce: (you can click HERE for more photos of the Herb & Lemon Sauce)
  • • 1 Bunch Herb of Choice (basil, cilantro, Italian flat-leaf parsley, parsley, mint) (Pick 1 or do a combo), washed and tips of stems chopped or ripped off
  • • Juice of 1 lemon
  • • 1 garlic clove, peeled
  • • 1 Jalapeno (for a more spicier sauce OR you can omit it for a milder sauce)
  • • Salt & Pepper to taste
  • Mashed Potatoes: (you can click HERE for additional photos of how to prep the mashed potatoes)
  • • 3 Russet Potatoes, sliced into big chunks
  • • ½ cup nonfat milk
  • • 1 cup fat free cottage cheese
  • • ½ cup shredded Parmesan cheese
  • • 1 Tbsp onion powder
  • • 1 Tbsp garlic powder
  • • Salt & Pepper to taste

  • • Misto Olive Oil Spray or cooking spray
  • • 3 green zucchinis, sliced down the middle in the long way
  • • 2 roma tomatoes, sliced
  • • ¼ red onion, sliced thinly
  • • 2 Tbsp parmesan cheese
  • • ½ tsp garlic powder
  • • Salt & Pepper to taste
Instructions
  1. For the tomato zucchini bake: Pre-heat the oven to 400° Bake.
  2. Spray a glass pyrex dish with a Misto or cooking spray.
  3. Line the zucchini in a row. Add the sliced tomatoes. Add the sliced onions. Sprinkle on the garlic powder, parmesan cheese, salt, & pepper and spray once again with the cooking spray or Misto spray.
  4. Put in the oven and bake for 35 minutes. While this is baking, prep the pork and start to boil the water for the potatoes.
  5. For the pork: In a blender or food processor, add in the cilantro, lemon juice, garlic, salt, & pepper. Puree.
  6. (***After you prep the sauce, start to make the potatoes. The water should be boiling by now).
  7. Cover a cookie pan with tinfoil for easy clean-up.
  8. Spray the tin foil with a cooking spray.
  9. Add the pork loin & top with the cilantro sauce.
  10. Cook the pork in the oven under Broil for 4 minutes.
  11. Flip and cook the other side for 4 more minutes.
  12. For the potatoes: Boil the water and add the potatoes.
  13. Cook for about 8 minutes until the potatoes are soft when you poke them with a fork.
  14. Drain.
  15. Add in all the other ingredients to the pot with the potatoes.
  16. You can use a masher to mash up the potatoes OR you can use a hand-held blender. Mash & Serve!
