Latin Pork Tacos with Cucumber Salad

You can make quick and easy tacos and add any topping you like! Try out a variety of the toppings below by making a taco bar. Taco bars are super fun. Simply put each topping into its own little ramekin. Next, everyone gets to sprinkle on as much or as little as they like in order to eat their own creation.

Ingredients
- Pork Tacos:
- 8 oz. pork tenderloin, sliced into thin slices
- Salt & Pepper
- 3 Tbsp lime juice
- 1 cup nonfat refried beans
- ½ cup salsa
- 8 corn tortillas
- Limes, sliced, for squeezing over the tacos
- ***Taco Bar Toppings include: guacamole, sliced avocado, sour cream, shredded cheese, sliced olives, chopped cilantro, sliced red or yellow onion, shredded lettuce, shredded cabbage, diced tomatoes, sliced green onions, diced mango, and more!
- Cucumber Salad:
- 1 cucumber, peeled and thinly sliced into rounds
- 2 Tbsp lime juice
- Chili Powder to taste
- Salt & Pepper to taste
- Cilantro (optional)
Instructions
- Pork Tacos:
- Sprinkle salt & pepper onto the sliced pork tenderloins and cook over medium heat in a pan for about 2-3 minutes on each side until cooked through.
- Drizzle lime juice over the pork while it is cooking.
- In a pot, warm up the refried beans over the stove.
- Warm up the tortillas in the microwave or on the gas stove top.
- Put a tortilla on a plate.
- Cover with 2 Tbsp of the refried beans.
- Top with 1 oz of the cooked pork.
- Add 1 Tbsp of salsa and any other topping you desire.
- Cucumber Salad:
- Mix the cucumber, lime juice, chili powder, salt, and pepper in a bowl and serve. You can garnish with cilantro if you want.
